  • 5 pcs  chicken thighs & drumsticks

  • 1 cup pineapple juice

  • 1/3 cup soy sauce

  • 1/3 cup brown sugar

  • 4 minced garlic cloves

  • 1 tsp black pepper

  • 2 pcs red chili

  • 1/2 tsp salt

  • 1 cup pineapple chunks

  • 1 medium onion (chopped)

  • 1/3 cup of banana ketchup

  • 1 tsp cornstarch (dissolved in 2 tbsp water)

  • 2 tbsp vegetable oil

  • Basil (for garnish)

Directions

  • Marinate the Chicken:
  • In a large bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, black pepper, red pepper flakes, and salt.
  • Add the chicken pieces, making sure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  • Cook the Chicken:
  • Heat vegetable oil in a large pan over medium heat.
  • Remove the chicken from the marinade (reserve the marinade) and brown the chicken pieces on all sides for about 5-7 minutes.
  • Remove the chicken from the pan and set aside.
  • Cook the Vegetables:
  • In the same pan, add more oil if needed and sauté the onions until translucent.
  • Add the bell peppers and cook for another 3-4 minutes until slightly tender.
  • Combine and Simmer:
  • Return the chicken to the pan and pour in the reserved marinade along with the pineapple chunks.
